“You are only as good as the people you surround yourself with.” Simon Vine knows this all too well as a veteran of the hospitality industry. Simon has developed his culinary skills and hospitality management experience in a wide variety of settings over the past 25 years. From mom and pop pizzerias, to film & TV sets, from corporate catering, to big chain restaurants like Earls and Milestones, from French to Indian, Texas style BBQ to Southeast Asian, Simon has always sought to broaden his horizons and deepen his understanding of the Hospitality and Restaurant industries. Prior to joining the team at Night Owl Hospitality and Cantina Del Centro, Simon was the head chef of Mountain Trek, one of North Americas top health spas. Growing up in Vancouver, Simon began his first job in the kitchen when he was just 17 years old. Fast forward, he is now bringing his expertise as a chef and restaurant manager to Night Owl Hospitality.
Simon moved from Vancouver to Nelson, BC for just over 4 years ago and considers the city home. With no formal training, it is only through dedication, hard work and determination that he has been able to navigate his path to success. A skilled culinary professional by trade, Simon also has a keen eye for spotting others with a gift and aptitude for the craft. He is passionate about developing talent and flavours from around the world.
When not in the restaurants, Simon loves to spend time with his wife and son exploring the natural beauty of his backyard in the Kootenay mountains.
